This is my favorite dish and one of the comfy food which I can have on those days when I am bored of having salad day crave for something creamy or pasta or any Indian noodles. I am using Zucchini to make my noodles, which is low in calories and contains vitamin A and C, its also a good source of potassium and fibre.
- Zucchini- 2 medium
- Tomatoes – 1
- Sun-dried Tomatoes- 1/4 cup
- Avocado – 1
- Cilantro – 1 bunch
- Mint – 1/4th cup
- Green chillies – 2 medium
- Red bell pepper – (preferred )
- Juice of 1 Lemon
- Garlic – 2 cloves
- Dates – 2 to 3 (depends on your taste level)
- ACV-1 tsp
- Chilli powder – 1 tsp
- Cumin powder – 1 tsp
- Dried pomegranate powder-1/2 tsp
- Chaat Masala-1/2 tsp optional
- Himalayan Salt
Additional things required:
Spiralizer Zucchini using the Spiralizer (if you want thin noodles use thin blades)
Soak sun-dried tomatoes in warm water for atleast an hour and drain it. Now add tomatoes, Sun-dried tomatoes, Red bell pepper, Red chili powder, Cumin powder, Dried pomegranate powder, dates, ACV and Chaat Masala in blender/ food processor( I use my Vitamix) and pulse it until it gets chunky.
Avo Pesto Sauce:
Remove the pit and scoop the Avocado into the blender, add cilantro, mint, garlic, green chilies, salt and lemon juice to it. Now blend it into a smooth paste.
Add Tomato Sauce and Avo Pesto Sauce to your Zoodles. Garnish it with some cilantro at the top and enjoy.
